Ingredients :
- 300 g pearl barley
- 1 can of tuna in oil
- 2 onions
- 3 cloves of garlic
- 1 zucchini squash
- 1-2 carrots
- 1 not large sweet red bell pepper
- 3 tablespoons olive or sunflower oil
- salt, black pepper.
Pour the pearl barley with water and leave for сouple of hours, then drain the water, transfer the cereal to a saucepan, pour 3.5 glasses of water (I pour boiling water) and cook over low heat, stirring for about 30-35 minutes.
Heat the oil in a skillet or deep frying pan, fry the peeled and finely chopped onions and garlic in it, fry for 3-4 minutes, stirring occasionally, add peeled and chopped carrots and bell peppers, wash the zucchini, wipe dry and cut into slices, add to the stewpan to the rest of the vegetables. Stew the vegetables for about 10 minutes, stirring, they should crunch a little.
Add ready-made barley and tuna along with oil, mix gently, salt to taste, pepper. Close the lid and cook for another 5 minutes. Wonderful barley porridge with tuna and vegetables is ready! Serve immediately, hot chili peppers can be added if desired.
