Ingredients for 6 servings:
• Peas for soup - 500 g
• Soda - 1 teaspoon
• Peeled potatoes - 600 g
• Smoked pork ribs - 600 g
• Smoked pork belly - 400 g
• Peeled onions - 2 pieces
• Peeled carrots - 2 pieces
• Vegetable oil, salt, sugar, black pepper, allspice and bay leaves (to taste)
• Several slices of toast bread

 

Step 1
Let's start with the peas. We rinse. Fill with water to cover in the palm of your hand, and set to simmer over low heat. Over time, the foam will rise - this is the protein, collect it. Then add a teaspoon of baking soda and continue to cook. Soda helps the beans cook faster. And be careful not to burn the peas. Stir, reduce heat if boiling requires. The task is to get completely boiled peas. To do this, it must be cooked for at least an hour. In the meantime, let's move on to the rest of the soup ingredients.

 

Step 2
Cook ribs and potatoes. Together.
Everything is very simple - cut the potatoes into 2−3 cm cubes or pieces of any arbitrary shape, put them in a saucepan with the ribs and pour cold water.
There should not be a lot of water - just to cover the potatoes with ribs, literally by a couple of fingers. Cook over medium heat, 15 minutes until the potatoes are cooked. Salt after boiling.
While the potatoes are being cooked, there is time to do the sautéing.

 

Step 3
On low heat, onion and carrots with undercap should be fried with a minimum amount of vegetable oil. And here is the advice of the chief. Carrots need to be grated on the finest grater and on a medium - about half. Why at the smallest? For color.
First, fry the onion, chopped into 5 mm cubes, with the underwire. Then add the carrots. Sprinkle it with sugar. And fry on medium heat for about 10 minutes.

 

Step 4
As a result, we have mashed peas ready, boiled potatoes with ribs and wait, and sautéed onions and carrots with underwire is fried and also ready.
The next step is to combine everything and bring it to taste. Let it boil, add a few bay leaves and 5-6 black peppercorns. Add salt if required. And as soon as the soup has boiled, it is ready. Now let it brew for half an hour, and you can start your meal.
